APPLES ON BOURBON STREET by Josefine Thoren
20 ml Stockholms Aperitif - Svart
20 ml bourbon (Josefin prefers Wild Turkey)
20 ml acid-adjusted Swedish apples*
20 ml fermented cherry syrup**
Dry Swedish apple cider
Dried apple for garnish

Pour all ingredients except the apple cider into a highball glass. Fill the glass with ice then top off with dry apple cider. Stir lightly then garnish with dried apple.

*ACID ADJUSTED SWEDISH APPLES
Juice Swedish apples, fine strain then add 1% malic acid and 1% citric acid of total volume.

**FERMENTED CHERRY SYRUP
Save the syrup from preserved Maraschino cherries, or make your own by heating equal parts cherries and sugar. Add 1/4 parts water of total volume. Add 2% salt of combined weight. Let sit in a jar for 1-2 weeks, and burp the jar daily.
